Banana and Raisin Muffins

A healthy sugar free snack, full of wholesome natural ingredients that your children will love.

 

Makes 10 - 12

225g (8oz) wholemeal self-raising flour
2tsp baking powder
2 eggs, beaten
75ml (3floz) sunflower oil
75ml (3floz) milk or soy milk
2 bananas
125g (4oz) raisins

Sift the flour into a bowl with the baking powder. Beat together the eggs, oil and milk. Mash the bananas and add to the oil mixture. Pour into the flour and mix well. Stir in the raisins. Spoon into greased muffin tins. Bake in an oven at 200ºC, gas mark 5 for 15 - 20 minutes.

Variations: Use other dried fruit or nuts instead of raisins.
Add 1tbsp sifted cocoa powder or carob powder and increase the milk to 6tbsp.
